At the industrial level, it is produced from glucose by fermentation with yeast. Erythritol is powder with a transparent white brilliant appearance. It is 60¨C70% as sweet as table sugar. The United States and Japan label Erythritol as zero-calorie, while European Union label it as 0.24 kcal/g.
